Sofrito Recipe


Sofrito is more versatile than people think! It can be used in taco fillings, chili, curries and stir fry. Super quick flavor booster.
Yields about 14 ounces
medium roma tomatoes, roughly chopped
1 medium yellow onion, roughly chopped
5 cloves garlic, roughly chopped
1 medium green bell pepper, roughly chopped
1 bunch cilantro, roughly chopped
5 leaves of culantro (recao), optional 
Instructions: Place tomato in blender, blitz until smooth. Add onion and garlic and blitz until smooth. Add bell pepper and cilantro, blitz until smooth. 
If you’re not going to use it immediately, pour mixture into a standard ice cube tray and freeze. It will keep frozen for up to six months.
