SPAM GUISADA RECIPE, EATER 2020
2 tablespoons canola oil
1 small onion, julienned
5 cloves garlic, roughly chopped
¼ cup tomato sauce
2 cups water
2 packets sazon, con culantro y achiote
2 tablespoons Sofrito
1 medium russet potato, medium diced
1 (12-ounce) Original Spam, medium diced
1 tablespoon mixed herb blend (Mrs. Dash table blend or Trader Joe’s 21 salute)
1 (15-ounce) can of corn kernels
1 (15-ounce) can of green beans
Salt and pepper, to taste
In a 10-inch skillet, over medium heat, place onions into a pan and season. Saute for 1 to 2 minutes. Add garlic, then saute for 1 to 2 minutes. Add tomato sauce, water, sazon and sofrito. Season the mixture and set aside in a bowl.
Using the same pan, over medium heat, add oil and potatoes. Season the potatoes. Saute potatoes until browned, 2-3 minutes.
Add spam and saute until spam is browned, 2-3 minutes.
Add the tomato mixture back into the pan. Simmer mixture until the potatoes are soft and fork tender, 10-15 minutes. Mash a few of the potatoes and add back to simmering liquid, ensuring mixture thickens.
Add a can of corn and can of green beans. Simmer for 5 minutes or until the vegetables are warmed through.
Serve with white rice.
